Rinde: molde de 18 cm o fuente más baja de 24 cm
Para el almíbar:
Agua, 200 cc
Azúcar, 200 gr
Café instantáneo, 3 a 4 cdas
Para el relleno:
Crema de leche, 200 gr
Queso mascarpone o queso crema tipo Philadelphia o Finlandia. 300 gr
Agua, 30 cc
Yemas, 4 u
Azúcar, 80 gr
Para el armado:
Galletas vainillas, 300 gr
Cacao amargo para espolvorear
Para el almíbar: en una olla al fuego colocar el azúcar con el agua hasta que rompa hervor, dejar 5 minutos más.
Diluir el café en agua fría (nunca poner el café sin diluir previamente en agua, la intensidad del café es a gusto)
Incorporar el café al almíbar, mezclar y reservar.
Para el relleno:
Para la crema de yemas: Mezclar el agua, el azúcar y las yemas y llevar a cocinar a baño maría sin dejar de batir hasta notar que el azúcar se disuelve por completo (este paso es sumamente importante ya que es en el momento que las yemas se cocinan). Sacar del fuego y batir con batidora eléctrica hasta la batidora deje huella y se pueda ver por dónde va pasando.
Para la crema de queso: Batir la crema de leche (natilla) a medio punto, sería lo mismo que las yemas, cuando se pueda ver por dónde pasa el batidor ahí está lista. Reservar. Ablandar el queso mascarpone o queso crema en el microondas solo 10 segundos para maniobrarlo mejor e incorporarlo a la crema batida.
Unificar todo a la crema de yemas hasta obtener una mezcla homogénea que será el relleno.
Para el armado: Mojar las vainillas en el café y acomodar como base en una fuente, cubrir con parte del relleno y repetir con otra capa de vainillas y relleno. Emparejar y llevar a heladera hasta el día siguiente.
Desmoldar si se usó un molde desmontable o dejar en fuente y cubrir con cacao amargo para espolvorear.
