Salsa inglesa, ½ tz
Jugo de naranja, 3 cdas
Manzana, 1 u
Para el rub (mezcla de especias):
Comino, ½ cda
Jengibre, 1 cda
Canela, 1 cda
Romero, 1 cda
Pimienta al gusto
Ajo en polvo, 3 cdas
Cebolla en polvo, 3 cdas
Azúcar, 4 cdas
Pimentón, 1 cda
En un bowl, mezclar todas las especias del rub y reservar. En una placa del tamaño de las ribs, colocar suficiente papel de aluminio, acomodar las ribs encima y colocar la mezcla de las especias en toda la pieza de carne, que no quede sin mezcla en ninguna parte. Envolver muy bien, cuidando que no quede ningún agujero abierto y llevar al horno a 130°C durante dos horas y media. Mientras pasa este tiempo proseguir con la preparación de la salsa barbacoa
Para la salsa barbacoa: en una sartén colocar dos cucharadas de aceite de oliva y dejar calentar. Cortar los ajos en brunoise y las manzanas en cuadritos irregulares. Colocar todas las verduras y dejar dorar. Cuando ya estén bien cocidas, agregar todos los ingredientes restantes y dejar cocinar durante unos 20 minutos a fuego medio. Dejar enfriar y pasar por la procesadora de alimentos.
Una vez transcurrido este tiempo, el siguiente paso es cubrir las ribs con la salsa barbacoa y llevar nuevamente al horno, cubierto con papel aluminio. Dejar cocinar durante unos 40 minutos más, aproximadamente. Cuando haya pasado este tiempo, las ribs deberían estar tiernas y cortarse fácilmente sin la necesidad de utilizar un cuchillo. Después, sacar las ribs del horno, quitarle el aluminio y llevar nuevamente al horno a 180°C durante 30 minutos hasta dorar.
