Estofado con sobras de asado

Sobras de carne, ½ kg / Leftover meat, 1 lb

Cebolla morada, 1 u / Red onion, 1u

Ajo, 3 dientes / Garlic, 3 cloves

Zanahorias, 6 u / Carrot, 6u

Papa, 1 u grande / Potato, 1u large

Perejil, 1 puñado / Parsley, 1 handful

Aceite de oliva a gusto / Olive oil to taste

Laurel, 3 hojas / Bay leaves, 3

Vino tinto, ½ tz / Red wine, ½ cup

Puré de tomate, 1 lata / Tomato puree, 1 can

Sal a gusto / Salt to taste

Pimienta a gusto / Pepper to taste

Cortar la carne sobrante en dados, la cebolla y el ajo en brunoise, la zanahoria en rodajas chicas, la papa en cuadraditos y el perejil finamente.

En una olla con aceite dorar los dados de carne, sacarlos y reservarlos.

En la misma olla añadir la cebolla y el ajo hasta que se dore bien, y volver a agregar la carne con la zanahoria, la papa, el laurel y el vino. Mezclar y dejar que evapore el alcohol. Salpimentar a gusto.

Por último, añadir el puré de tomate y dejar que la preparación tome cuerpo.

Servir y decorar con el perejil picado.

Instructions

Cut the remaining meat into cubes, the onion and garlic in brunoise, the carrot into small slices, the potato into cubes and the parsley finely.

In a pot with oil, brown the meat cubes, remove them and reserve them.

In the same pot add the onion and garlic until golden brown, and add the meat again with the carrot, potato, bay leaf and wine. Mix and let the alcohol evaporate. Season to taste.

Finally, add the tomato puree and let the preparation take shape.

Serve and decorate with the chopped parsley.
