Bombones de yema

Acá te dejo una opción infalible para usar las yemas que te sobran // Here I leave you an infallible option to use the yolks you have left over.

Yemas de huevo, 12 u // Egg yolk, 12u

Azúcar, 200 gr // Sugar, 200g

Agua, 100 ml // Water, 100 ml

Ralladura de naranja o limón, 1 u // Orange or lemon zest, 1u

Chocolate 100% amargo, 200 gr // Dark chocolate to melt, 200g

Batir las yemas hasta integrar por completo. Reservar.

En una olla al fuego, agregar el azúcar, el agua y la ralladura de limón o de naranja. Cocinar hasta formar un almíbar.

Añadir en forma de hilo el almíbar a la mezcla de yemas, y batir constantemente.

Luego, llevar al fuego y cocinar sin dejar de batir hasta que la yema esté completamente cocinada. Enfríar, tapar con papel film y llevar a frío.

Luego, con las manos aceitadas, formar bolitas y pasarlas por el chocolate derretido previamente.

Dejar cada bombón en una bandeja con papel manteca hasta que se sequen. Listo!!!
