Almendrado (nueva receta)

Crema de leche, 500 ml // Heavy cream, 500cc

Extracto de vainilla, 1 cdta // Vanilla extract, 1 tsp

Leche condensada, 390 ml // Condensed milk, 390cc

Almendras, 1 puñado // Almond, 1 handful

Para las garrapiñadas: // For the garrapiñadas:

Almendras, 250 gr //Almond, 250g

Extracto de vainilla, 1 cda // Vanilla extract, 1 tbsp

Azúcar, 200 gr // Sugar, 200g

Agua, 160 ml // Water, 160cc

Batir muy bien la crema de leche con la leche condensada hasta obtener un punto medio. Añadir el extracto de vainilla y seguir batiendo. Reservar.

Para la garrapiñada: en una sartén agregar el azúcar, las almendras, el agua y la vainilla. Dejar reducir y revolver cada tanto. Cuando haya caramelizado por completo, llevar a un papel manteca y esparcir. Dejar enfriar. Luego, procesar hasta que quede una tierra de garrapiñada. Reservar.

Por otro lado, picar las almendras y añadirlas a la mezcla del helado. Incorporar bien. Llevar a molde de 16 cm con una base de papel film. Llevar a frío durante al menos 8 horas.

Pasado el tiempo en frío del helado. Desmoldarlo y cubrir con la tierra de garrapiñada. Listo. ¡Una delicia!
